Pumpkin Bundt Cake
I got the recipe from Martha (of course). Before finding this one, I was thinking of making a layer cake with a cream cheese frosting, but after seeing the ingredients, I figured it was fattening enough.
4 C Flour
4 tsp Baking Powder
1 tsp Baking Soda
1 Tsp Salt
1 Tbs Ginger
2 Tsp Cinnamon
1 Tsp Nutmeg
1/2 Tsp Cloves (I didnt have this)
2 Sticks butter, room temp
2 1/2 C brown sugar
4 Lg Eggs
1 C Buttermilk (I didnt have this either so I used 1/2 & 1/2)
1 1/2 C Pumpkin Puree
Oven 350
Spray and Dust Bundt Pan
Whisk dry ingredients and set aside
Beat butter & brown sugar until fluffy
Drop 2 eggs on the floor and get two more
Add eggs one at a time beating and scraping after each
Add Four mixture in 3 steps alternating milk
Add pumpkin
Beat until combined
Bake 55 minutes. ( I should have taken it out after 50) Cool in pan for 30. (Dont, I will dry out, maybe do 10, then put on a wire rack)

Ok, so, Ill be making pumpkin'y things all month. Monday, I baked and pureed 5 quarts of pumpkin. What I didnt use last night for the cake I froze. I am in the mood for pumpkin soup. Soon...
A pumpkin pie has been requsted, I found a recipe for Pumpkin Pecan Pie. That sounds like a nice, out of the norm, alternative.
